Red Bliss Potato Cakes

Yield: 3-4 Servings

  • 12oz. Medium Sized Red Potatoes
  • 1 tbsp Fresh Press Farms high heat Olive Oil 
  • Salt & Pepper to Taste
  • 1 tbsp Sour Cream
  • 1 Scallion

Preheat oven to 425F. Wash potatoes and dry. Place in a medium sized bowl, drizzle with olive oil, and season with salt and pepper. Place on a sheet tray and bake in oven for 20 minutes, flip, then bake for another 10-15 minutes, or until tender. Rest for 5 minutes, then return to bowl and mash with a mallet or fork. Add sour cream and sliced scallions, both white and green. Fold potato mixture together and let rest at room temperature for at least 10 minutes. Divide into 6 portions, and roll into a ball by hand. Flatten slightly by gently pressing on them, and cool in refrigerator while preparing other components.

 

Seasoned Flour

Yield: 3-4 Servings

  • 2 Cups AP Flour
  • 1 Cup Corn Starch
  • 1 1/2 tbsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tsp Smoked Paprika
  • 1 tbsp Kosher Salt
  • 2 tsp Old Bay
  • 1 tsp Dry Oregano
  • 1/4 tsp Cayenne
  • 1/2 tsp Black Pepper  

Place ingredients into a medium sized mixing bowl and whisk to combine.

 

 

Chicken Fried Steak

Yield: 3-4 Servings

  • 1 Cup Buttermilk
  • 1 Egg
  • 2 tbsp Tabasco 
  • 1 tsp Kosher Salt
  • 1 1/2 Lb Cube Steak
  • Salt & Pepper to Taste
  • 3 Cups Seasoned Flour
  • 1/4 Cup Fresh Press Farms Peanut Oil

Combine buttermilk, egg, tabasco, and salt in a mixing bowl. Pat cube steaks dry with a paper towel, then season liberally on both sides with salt and pepper. Dip into buttermilk mixture, shaking off excess. Dip cube steak into seasoned flour mixture and push the flour into the steak until well coated. Set aside on a sheet tray to rest for 10 minutes. Heat oil in cast iron skillet until shimmering.  Add steaks in batches, and fry on one side for about 4 minutes until golden, then flip and fry for another 3-4 minutes. Remove from pan onto a cooling rack or paper towel to drain.

 

Mushroom Gravy

Yield: 3-4 Servings

  • 3 tbsp Fresh Press Farms high heat Olive Oil
  • 8 oz. Pkg Crimini Mushrooms, Sliced 
  • 8 oz. Pkg Shiitake Mushrooms, Sliced
  • 2 Medium Shallots
  • 4 Cloves Garlic
  • 1/3 Cup Sherry Wine
  • 2 Cups Heavy Cream
  • Salt and Pepper to Taste 

Preheat large saute pan on high heat. Remove and reserve stems from shiitakes. Slice mushrooms 1/4 “ thick. Peel shallots and garlic and slice thinly. In batches, add oil, then mushrooms to sauté pan. Allow to cook until browned on one side, then toss with shallots, followed by garlic. Cook until fragrant. Degalze pan with sherry wine and reduce briefly. Add cream, and reduce by about half. Season to taste with salt and freshly cracked black pepper.
