  • 1 pound (450g) fresh carrots, peeled and trimmed
  • 2 tablespoons Fresh Press Farms Pure Gold Olive Oil
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)


      • Preheat your oven to 400°F (200°C).
      • Slice the carrots into sticks or coins, about 2 inches (5cm) long. Try to keep them similar in size for even cooking. Place the carrots in a large mixing bowl.
