Red Bliss Potato Cakes

Yield: 3-4 Servings

  • 12oz. Medium Sized Red Potatoes
  • 1 tbsp Fresh Press Farms high heat Olive Oil
  • Salt & Pepper to Taste
  • 1 tbsp Sour Cream
  • 1 Scallion

Preheat oven to 425F. Wash potatoes and dry. Place in a medium sized bowl, drizzle with olive oil, and season with salt and pepper. Place on a sheet tray and bake in oven for 20 minutes, flip, then bake for another 10-15 minutes, or until tender. Rest for 5 minutes, then return to bowl and mash with a mallet or fork. Add sour cream and sliced scallions, both white and green. Fold potato mixture together and let rest at room temperature for at least 10 minutes. Divide into 6 portions, and roll into a ball by hand. Flatten slightly by gently pressing on them, and cool in refrigerator while preparing other components.

  • 1 tsp Smoked Paprika
  • 1 tbsp Kosher Salt
  • 2 tsp Old Bay

Dip into buttermilk mixture, shaking off excess. Dip cube steak into seasoned flour mixture and push the flour into the steak until well coated. Set aside on a sheet tray to rest for 10 minutes. Heat oil in cast iron skillet until shimmering.  Add steaks in batches, and fry on one side for about 4 minutes until golden, then flip and fry for another 3-4 minutes. Remove from pan onto a cooling rack or paper towel to drain.
