Peach Cider Pancakes

INGREDIENTS

For the pancakes:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 2 tbsp Fresh Press Farms Peach Cider Vinegar
  • 1 large egg
  • 2 tbsp melted butter or Fresh Press Farms Classic Olive Oil
  • 1/2 tsp vanilla extract

For the honey butter syrup:

  • 1/2 cup honey
  • 1/4 cup unsalted butter
  • 1/2 tsp vanilla extract
  • Pinch of salt

        INSTRUCTIONS

        • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, combine the milk and Peach Cider Vinegar and let it sit for about 5 minutes (this creates a makeshift buttermilk). After the 5 minutes, add the egg, melted butter (or olive oil), and vanilla extract to the milk mixture and whisk together.
        • Pour the wet ingredients into the dry ingredients and gently mix until just combined, being careful not to overmix.
        • Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or a spray of oil. Pour 1/4 cup portions of the pancake batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes or until golden brown and cooked through.
        • In a small saucepan, combine the honey and butter. Heat over low-medium heat until the butter has melted. Stir in the vanilla extract and a pinch of salt. Remove from heat.
        • Stack the pancakes on plates, drizzle with the warm honey butter syrup, and enjoy!

        Chef's Note: For added texture and flavor, consider mixing in some chopped nuts, like pecans or almonds, into the pancake batter. Alternatively, serve with fresh berries or banana slices for a fruity touch.
