Vegetable and Chickpea Stir-Fry

INGREDIENTS

  • 2 tbsp Fresh Press Farms Bold Olive Oil
  • 1 cup butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • 1 red bell pepper, sliced into thin strips
  • 1/2 cup red onion, thinly sliced
  • 2 cloves garlic, minced

  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup or honey
  • 1 tsp ginger, grated

INSTRUCTIONS

  • In a small bowl, whisk together soy sauce (or tamari), maple syrup (or honey), grated ginger, and black pepper. Set aside.
  • In a large skillet or wok, toast the sesame seeds over medium heat, stirring constantly until they turn golden brown. Remove and set aside.
