Vegetable and Chickpea Stir-Fry

  • 2 tbsp Fresh Press Farms Bold Olive Oil
  • 1 cup butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • 1 red bell pepper, sliced into thin strips
  • 1/2 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup or honey
  • 1 tsp ginger, grated
  • 1/4 tsp black pepper
  • 2 tbsp sesame seeds, toasted
  • 2 green onions, chopped (for garnish)


  • In a small bowl, whisk together soy sauce (or tamari), maple syrup (or honey), grated ginger, and black pepper. Set aside.
  • In a large skillet or wok, toast the sesame seeds over medium heat, stirring constantly until they turn golden brown. Remove and set aside.
  • Using the same skillet, heat the Bold Olive Oil over medium-high heat. Add the butternut squash cubes and Brussels sprouts. Sear them until they begin to caramelize, about 5 minutes.
  • Add the red bell pepper, red onion, and garlic to the skillet. Continue to stir-fry for another 3-4 minutes, or until the vegetables are tender but still have a bite to them.
  • Incorporate the chickpeas, ensuring they are well mixed with the vegetables.
  • Pour the soy sauce mixture over the vegetables and chickpeas, stirring well to coat everything in the sauce. Let the mixture simmer for another 2-3 minutes so the flavors meld together.
  • Finish by sprinkling the toasted sesame seeds over the stir-fry.
  • Serve the stir-fry hot, garnished with chopped green onions. It pairs wonderfully with steamed rice or quinoa.
