Grilled Chicken Kabobs and Dipping Sauce

INGREDIENTS

For the chicken kabobs:

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • Wooden or metal skewers

For the dipping sauce:

  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh mint
  • 1 clove garlic, minced
  • 1/2 tsp Dijon mustard

  • Salt and black pepper, to taste

INSTRUCTIONS

  • Preheat a grill or grill pan to medium-high heat.
  • In a large bowl, combine the chicken cubes, Fresh Press Farms High Oleic Sunflower Oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper, and toss until the chicken is well coated in the spice mixture.
  • Thread the chicken cubes onto the skewers, leaving a little space between each piece.
  • Grill the chicken kabobs for 8-10 minutes, or until the chicken is cooked through and lightly charred, turning the skewers occasionally to ensure even cooking.
  • While the chicken is grilling, prepare the dipping sauce. In a small bowl, whisk together the Fresh Press Farms Bold Olive Oil, lemon juice, chopped parsley, chopped mint, minced garlic, Dijon mustard, honey, salt, and black pepper until well combined.
